Watermelon Lemonade Cocktail

Mix up a batch of this zesty, fruity watermelon lemonade with tequila for a summery party cocktail. The recipe can be easily adapted to be alcohol-free.

Although you can usually find watermelon year round, it’s just never as good as when it’s in season. Adding watermelon to the most classic summer drink – lemonade – is sure to be a hit at any summer party. You could even make this without the alcohol and give your guests the option to add it. Either way, it’s an incredibly refreshing and flavourful drink.

Ingredients

5½fl oz (160ml / ⅔ cup) lemon juice
⅔ cup (150g) granulated sugar
7–8fl oz (200–250ml/about 1 cup) warm water
cold water, to top up
16fl oz (480ml/2 cups) blanco tequila
8fl oz (240ml/1 cup) watermelon juice
1 lemon, thinly sliced
1 lime, thinly sliced
cubed ice
club soda (soda water), to top
watermelon slices, to garnish

Method

In a large pitcher, stir the lemon juice and sugar with the warm water until the sugar dissolves. Top up with cold water. Chill the lemonade in the refrigerator for 2 hours.

Once cold, add the tequila and watermelon juice and stir to combine. Refrigerate until chilled, about 1 hour.

Before serving, add the lemon and lime slices.

Pour into glasses with ice and top each with club soda. Garnish with watermelon slices.
