The Best Cauliflower Soup, with Chilli Almond Butter
Introduction
If there’s a lonely cauliflower in the fridge, it’s almost certain to go into this soup, even if I do have to text a neighbour to borrow nutmeg because Alba’s absconded with my jar to use as a rattle. True story. It’s hands down my favourite soup – the spiced chilli butter and crunchy almonds finish the dish beautifully (props to my friend Emily Riddle who introduced me to a version years ago). Pack leftovers for lunch with the almonds in a separate container – the butter will melt on contact once you’ve reheated the soup.
