Introduction

This recipe is a little bit like having dessert for breakfast. A high-protein, oaty ‘cheesecake’, natural mixture is topped with mixed berries. Overnight oats are a staple in my weekly cooking rotation as they take 10 minutes to prepare, are super delicious and are literally designed to be prepped tor the week, making them a must-try for you at home.

First, prepare the berry topping. Put the frozen mixed berries into a saucepan with 3 tablespoons water and cook over a medium heat until the berries are completely broken down, then mash with a potato masher.

Meanwhile, mix together the rolled oats, peanut butter, maple syrup, yoghurt, milk and protein powder in a bowl until well combined.

Layer the overnight oats into containers or bowls: oat mixture first, then the berry compote. Leave the oats to soak for at least 4 hours or overnight before eating.

Store in the fridge for up to 4 days.
