Sesame-Charred Squash with Tenderstem, Spring Onions, Orange and Ginger
Introduction from Rukmini Iyer
I love the Asian flavours in this dish: the sweetness of the squash works beautifully with the sesame, orange and ginger. Almost a meal in itself.
Ingredients
Essential kit
You will need: a barbecue.
Method
Tip the squash and broccoli into a large bowl, and mix with the oil, garlic, sea salt flakes, chilli flakes and Sichuan peppercorns.
In a separate bowl, mix the sesame oil, orange zest and juice, ginger, sesame seeds, sea salt flakes and spring onions. Taste and adjust the salt as needed, then set aside.
Once your barbecue is good and hot, lay the Tenderstem on the grill and cook for 3–5 minutes per side, until just charred and cooked through. Transfer to a platter.
Once your barbecue is at a medium heat, lay the squash slices on the grill and cook for 25 minutes on each side, covered with a roasting tin or the lid.
Once the squash is cooked through, arrange on a platter with the broccoli. Pour over the sesame dressing, and serve hot.
