Puris (or Luchis)
Introduction
Arguably one of the best types of Indian bread – these light, puffed-up pillows will disappear in seconds. Our family motto is ‘don’t count how many you’re eating, just eat’ – though my dad and his brothers would on occasion have competitions as to who could eat the most in one sitting. I recommend these as a ‘make with a friend’ activity – one of you can roll while the other fries – Mum and I had 12 of these done in minutes working as a team (it took her considerably longer when we were kids and less useful at rolling/deep-frying). Based on Madhur Jaffrey’s recipe, these puris are perfect with crispy fried aubergine.
