These light, ridiculously moreish muffins are on constant rotation at home – I always have a stash in the freezer for on-the-go snacks (and they go well with a glass of white wine if you get peckish late at night too). With a mix of spelt and self-raising flour, they’re indulgent but secretly good for you. Serve sandwiched with cream cheese.
