Slow Cooker Chicken Soup for the Soul
Warm and comforting, this easy slow cooker chicken soup is perfect for cold winter days.
This is my go-to recipe if I’m feeling a little under the weather. There’s something about it that is just so comforting. It also freezes well, so you can have a little pick-me-up to hand for whenever you need it.
|boneless, skinless chicken thighs, cut into small chunks
|onion, finely chopped
|of celery, finely chopped
|carrots, finely chopped
|1 x 200g tin
|of sweetcorn, drained and rinsed
|sea salt and freshly ground black pepper
|a handful of
|fresh parsley leaves, chopped
You will need a slow cooker.
COOK 8 hours on low
Put all your ingredients, apart from the sweetcorn, into your slow cooker, then season and stir well. Cook on low for 7 hours.
Add the sweetcorn and cook for a further hour.
Serve scattered with fresh parsley, with some buttered crusty bread on the side.
