Simple All-In-One Daal With Roasted Shallots, Coriander, Pomegranate and Cashews

Introduction

This easy, flavoursome daal will look after itself in the oven for an hour, so you won’t need to worry about it running dry. With a little coconut milk or single cream stirred through at the end, it’s rich and comforting – perfect with rice or naan bread.

Ingredients

banana shallots, peeled and halved
vegetable oil
bay leaf
ground cumin
ground coriander
ground turmeric
freshly ground black pepper
brown lentils, rinsed well
boiling water
ginger, grated
garlic, crushed
sea salt
coconut milk/single cream
lime, juice only
To serve:
pomegranate, seeds only
fresh coriander, roughly chopped
toasted cashews
