Retro-fabulous Orange, Butterbean, Artichoke and Olive Salad


This recipe is inspired by Niki Segnit’s The Flavour Thesaurus: More Flavours – a wonderful resource for anyone who loves food and flavours and wants to know how to put them together. I certainly wouldn’t have thought of pairing orange, butterbeans and black olives before but it works perfectly. Here, I add artichokes, walnuts and spinach for retro appeal, flavour and texture. It’s perfect for a light dinner and lunchbox on a hot day.
