In this Indian paratha roll sits a mixture of golden chunks of fried chilli paneer, soft spiced peppers and a lathering of cream cheese to make an easy and delicious lunch.

A mouth watering Indian street food, this features spiced paneer grilled to perfection, wrapped in a soft, flaky paratha. With crunchy onions, fresh greens and a tangy sauce, it’s a delicious, hand-held meal that’s full of flavour and irresistible texture.

Ingredients

40g unsalted butter
400g paneer, cut into 2cm cubes
½ tbsp chilli powder
1 tbsp vegetable oil
2 garlic cloves, chopped
1 tbsp chopped ginger
1 onion, sliced
½ a yellow or orange pepper, sliced
½ a red pepper, sliced
1 tsp ground black pepper
1 tsp ground cumin
1 tsp chilli powder
1 tsp chilli flakes (optional)
1 tsp chaat masala (store bought or homemade recipe on page 188 of Easy Indian Food Anyone Can Make)
1 tsp salt, or to taste
3-4 shop-bought frozen paratha, or make your own (page 70)
200g cream cheese
2 tbsp tomato ketchup for each paratha
To serve
coriander leaves
green chutney (page 171) or desi chilli sauce (page 175)

Method

Heat the butter in a pan on a very low heat and add the paneer and chilli powder. Sauté for 2 minutes, until golden and crispy, then remove from the pan and set aside.

Add the oil, chopped garlic and ginger to the same pan and sauté on a low heat for a few seconds, until fragrant. Add the onion, peppers, spices and salt. Sauté on a medium heat for 2 minutes, until the onion softens, then add the crispy paneer to the pan and toss it on a high heat for a few seconds until well coated.

If using frozen paratha, cook them according to the manufacturer’s instructions. Alternatively, you can make your own paratha using the recipe on page 70 (Easy Indian Food Anyone Can Make). Spread 2–3 spoonfuls of the paneer tikka mix on to each paratha, spread some cream cheese on top, then some ketchup, and roll it up from the sides.

Wrap it halfway with foil and serve while it’s warm, garnished with some coriander leaves and with some green chutney or spicy desi chilli sauce on the side.
