Nadiya Hussain’s Banana Peanut Bark

This delicious chocolate, peanut and banana bark is ideal for packing into lunchboxes for a little treat on the go. There's no baking required, you simply set the ingredients in the freezer. As seen on Nadiya's Cook Once Eat Twice on BBC2.

Introduction

One of the best ways to eat bananas is frozen, so I want to show you how to make this frozen bark that can be enjoyed without very much work. A layer of frozen banana slices, peanut butter and melted chocolate – perfect to eat as it is or as a topping for ice cream.

Ingredients

3 bananas
250g smooth peanut butter
300g milk or dark chocolate
150g salted peanuts, roughly chopped
Good pinch of rock salt

Method

Line and grease a medium baking tray.

Take your bananas, peel and slice into coins. Lay all over the prepared sheet in an even layer, making sure they are tightly packed. Pop into the freezer and leave for a few hours.

Take out and spread over the smooth peanut butter. Melt the chocolate and spread all over the layer of peanut butter. Sprinkle over the salted peanuts, then the salt.

Pop into the freezer and leave there for a couple of hours before eating.

    I was disappointed with this recipe, it’s very salty and that was without adding the extra salt. Also once taken out of the freezer the bananas go very mushy very quickly and you can’t eat it without it making a mess of your hands. Also I am guessing you keep it stored in the freezer ( the recipe doesn’t say ) as my first attempt at making it was a disaster as I left it in an airtight container and ended up throwing it away as the bananas went horrible and soggy and turned black !!!
