Miso Chicken with Aubergines, Spring Onions and Chilli
Introduction
This might be one of my favourite chicken dishes in the book, and it went through several versions before I arrived at this one, with just the right level of spice, miso, chilli and honey. I have been known to eat pieces of the chicken straight out of the tin, and if the pup is lucky, she gets tiny pieces of the chicken too.
Ingredients
free-range boneless chicken thighs, halved | |
baby aubergines, halved | |
banana shallots, peeled and halved | |
ginger, grated | |
garlic, grated | |
sesame oil | |
miso paste | |
honey | |
chilli flakes | |
sesame seeds | |
For the dressing: | |
lime, zest and juice | |
sesame oil | |
soy sauce | |
To serve: | |
spring onions, thinly sliced | |
freshly cooked white rice |
