This warming winter salad works well as a light main for two, or alongside a more substantial grain-based dish.
|carrots, peeled and cut into 5mm slices
|parsnips, peeled and cut into 5mm slices
|celeriac, peeled and cut into 5mm wedges
|walnuts, roughly broken
|baby spinach leaves
|blue cheese, e.g. Stilton
|For the dressing:
|red wine vinegar
