Filipino-style Garlic Pork Pot Roast
![Rukmini Iyer_India Express_c David Loftus_09](https://thehappyfoodie.co.uk/wp-content/uploads/2022/12/Rukmini-Iyer_India-Express_c-David-Loftus_09-scaled.jpg)
Introduction
This unusual pork pot roast uses the classic Filipino adobo flavours of garlic, bay, peppercorns and vinegar to slow-cook a whole pork shoulder. For a lazy weekend lunch, it’s a win – ten minutes in the morning to sear off the park and garlic, before sticking everything in the oven and letting it bubble away until lunchtime.
