Introduction
This is one of those ‘you barely need a recipe’ recipes, and yet I include it because there’s something so lovely about a fresh cherry tomato sauce with cannellini beans for added protein and texture. I like to top the sauce with a spoonful of ricotta – for a vegan version, I highly recommend the Palace Culture vegan ricotta (or feta) as an alternative.
