Air Fryer Honey Feta Cubes with Rosemary

These heavenly crisp feta bites from Bored of Lunch are flavoured with honey and rosemary and cooked in the air fryer to keep them healthy.

From the book

Introduction

These are absolutely stunning and my twist on a dish that I order in a local restaurant. They taste sensational and, trust me, if you make these for visitors or for a party they will be one of the first things to be demolished. Salty feta with sweet honey really is the stuff of dreams.

Ingredients

2 eggs, beaten
150g plain flour
200g panko or dried breadcrumbs, blitzed to a fine crumb
200g fat-reduced feta cheese, cut into cubes
6 tbsp honey
Sprigs of rosemary, chopped, to sprinkle
sesame seeds, to sprinkle

Essential kit

You will need: an air fryer.

Method

Put the beaten egg, flour and breadcrumbs into three separate bowls. Coat the feta cubes first in the flour, then the egg, shaking off the excess, then roll them in the breadcrumbs to coat.

Air-fry at 190°C for 9 minutes.

Coat the cooked cubes in the honey – you can heat the honey first if you like.

Sprinkle with the chopped rosemary and sesame seeds. Pop a cocktail stick into each chunk and serve.
