Ingredients

50ml vodka
35ml Pedro Ximénez sherry
35ml espresso
3 coffee beans

Method

You need a cocktail shaker for this one, filled with ice, and you need to shake all the ingredients except the coffee beans in it long and hard for at least 20 seconds. Strain into a chilled glass. The shaking will create the emulsification that gives this drink such an eye-catching appearance – an off-white crema that supports the coffee beans and contrasts nicely with the darker tones of the rest of the drink. It’s important that you add the coffee last when mixing the drink because if you add it first, it will melt the ice and dilute the drink. If you don’t have a home espresso machine, you can use any coffee as long as it’s very, very strong… As an even simpler alternative, just add some PX sherry to ordinary filter coffee and pour over ice – you could add some milk or cream if you like, too.
