Mary Berry’s Burrata Caprese Sharing Platter

Mary Berry's take on the classic Italian salad is elevated with extra creamy burrata. This is the perfect starter for late summer when tomatoes are at their best.

From the book

Introduction

Caprese is an Italian salad of mozzarella, tomato and basil. We have a real passion for burrata and prefer its softness to mozzarella. Spreading the burrata on the plate makes sure each spoonful has all the wonderful flavours.

Ingredients

2 large burrata
6 tomatoes, sliced
Small bunch of basil, leaves chopped
2 tbsp olive oil
4 tbsp balsamic glaze

Method

Break the burrata and spread the cheese over a large plate or platter. Sprinkle with sea salt flakes and ground black pepper, then place the tomato slices on top. Add a little more seasoning, then scatter with the fresh basil and drizzle with the oil and balsamic glaze.

Serve with crusty bread or toasted sourdough.

Mary’s Tips: Can be assembled up to 2 hours ahead. Dress with basil, olive oil and balsamic glaze just before serving. Not suitable for freezing.
