Who’s the author? Clem Haxby is the Culinary Director of The Salad Project, designing and innovating menus for the London-based salad bar since founders Florian de Chezelles and James Dare first opened their doors in 2021.
As well as being a qualified nutritional advisor, personal trainer and chef, Clem is the founder of the VINOMENAL wine club.
