Slow Cooker Chocolate Lava Cake

This self-saucing pudding is a bit of a magic trick. The boiling water sinks to the bottom of the pot, creating a rich chocolate sauce that sits underneath a light chocolate sponge! While this Chocolate Lava Cake is an all-in-one dessert, an extra drizzle of cream never hurts.

Ingredients

For the sponge:
240g plain flour
1 tbsp baking powder
200g sugar
40g cocoa
Pinch of sea salt flakes
230ml whole milk
60g unsalted butter, melted, plus a little extra for greasing
1 tsp vanilla extract
For the ‘lava’:
200g soft light brown sugar
50g cocoa
700ml boiling water

Essential kit

You will need: a slow cooker.

Method

Cooking time: 3 hours on high. Preparation time: 10 minutes.

Lightly grease the inside of the slow cooker pot with a little butter.

To prepare the sponge batter, sift together the flour, baking powder, sugar, cocoa and sea salt flakes in a large mixing bowl. Make a well in the middle of the flour mixture and pour in the milk, melted butter and vanilla extract.

To prepare the ‘lava’, combine the sugar and cocoa in a bowl. Spoon the sponge batter into the pot of the slow cooker, then sprinkle with the ‘lava’ mixture. Carefully pour over the boiling water. Cover the pot with the lid. Set the slow cooker to ‘cook’ mode, then turn to high and cook for 3 hours.

Calories: 423 kcals per serving (without cream).
