chestnut mushrooms, quartered
onion, roughly chopped
red pepper, roughly chopped
ground coriander
ground cumin
chipotle chilli flakes
smoked paprika
sea salt
olive oil
cannellini beans
black beans
red kidney beans
chopped tomatoes
vegetable stock
coriander leaves, to garnish
coconut yogurt and tortillas or nacho chips, to serve
For the salsa:
avocado, roughly chopped
lime, juice only
red onion, finely chopped
sea salt
