Russian Meatballs with Sour Cream, Rice and Tomatoes
Introduction
These meatballs, known as tefteli in Russia, are a delight – instead of adding breadcrumbs to the mince, you add a handful of cooked long-grain rice, so they’re often known as ‘porcupine’ meatballs. The sour cream and tomato sauce works beautifully with the base of softened onions and carrots – this is a firm weekend favourite.
Ingredients

onion, peeled and roughly chopped | |
freshly dill (reserve a tiny bit to scatter over at the end) | |
beef mince | |
pork mince | |
sea salt flakes | |
free-range egg | |
cooked long-grain rice | |
For the sauce: | |
onion, finely chopped | |
carrot, peeled and grated | |
butter | |
olive oil | |
chopped tomatoes | |
garlic, finely grated | |
sour cream | |
To serve: | |
cooked long-grain rice or mashed potato |
