Rochelle Humes’ Hot Spiced Apple Juice

This is a bit like a mulled apple juice, with a kick of ginger and optional booze! This is a great drink that the whole family can enjoy on cold winter nights.

Ingredients

500 ml/18 fl oz apple juice
1 tsp grated fresh ginger
2 star anise
1 cinnamon stick
4 tbsp rum or whisky (optional)

Method

Put the apple juice, ginger, star anise and cinnamon stick in a pan over a medium heat, bring to the boil, then reduce to a simmer, add the rum or whisky, if using, and leave to cook for 3 minutes to let the flavours develop. Strain the mixture into mugs, picking out the star anise and adding to the mugs also, then serve warm.
