Introduction
A variation on two of my favourite desserts, pineapple upside-down cake and coconut macaroons. These lovely tropical cupcakes are dusted with just the barest hint of cinnamon – these are probably the most addictive cupcakes.

softened unsalted butter | |
caster sugar | |
medium free-range eggs | |
unsweetened desiccated coconut | |
gluten-free plain flour (or ordinary plain flour, if not making gluten-free) | |
baking powder | |
pineapple chunks, drained | |
ground cinnamon, to dust |
