Another update on a favourite recipe – I was really missing a trick not adding a pinch of brown sugar to the miso aubergine recipe in The Green Roasting Tin. This updated version includes an easy side of kimchi fried rice, which you can make in about 10 minutes while the aubergines cook in the oven – nice enough to serve to friends, easy enough to make for yourself.
