Microwave Coffee and Walnut Cake
This quick and easy microwave mug cake recipe will have you whipping up a perfectly moist and intensely flavoured coffee and walnut cake in just three minutes!

Ingredients
For the cake: | |
2 tbsp | softened butter, plus extra for greasing |
1 tbsp | chicory and coffee essence |
2 tbsp | self-raising flour |
2 tbsp | soft brown sugar |
1 tbsp | chopped walnuts |
½ | beaten egg |
For the icing: | |
2 tbsp | mascarpone cheese |
1 tbsp | icing sugar |
½ tsp | chicory and coffee essence |
To decorate: | |
2 | walnut halves |
Essential kit
You will need: a small 300ml / ½ pint microwaveable mug and a 1000W, category-E microwave.
Method
1. To make the cake, lightly butter the inside of a small 300ml / ½ pint microwaveable mug. Add the butter and cook on high for 30 seconds -1 minute, or until melted. Stir in all the remaining cake ingredients and mix well.
2. Microwave on high for 1 minute, until risen and spongy. Allow to stand for 1 minute, then if you prefer, remove from the cup and allow to cool.
3. To make the icing, beat together the mascarpone with the icing sugar and chicory and coffee essence until smooth.
4. Spread the top of the cake with the icing and decorate with the walnut halves.
