Loaded hash browns are the ultimate comfort breakfast. Crispy potatoes, topped with chives, sour cream and crispy bacon bits. They’re super easy and delicious, and perfect for any time of the day, not just for breakfast.

Ingredients

2 large floury potatoes (I use Maris Piper)
1 small/medium egg, beaten
1 tsp cornflour (cornstarch)
olive oil spray
40g (1.5oz) cheese, grated
salt and pepper
For the toppings:
sour cream
chopped fresh chives
cooked crumbled bacon bits

Essential kit

You will need: an air fryer.

Method

Peel and coarsely grate your potatoes. Then soak in a medium–large bowl of cold water for 10 minutes.

Drain the grated potato. Dry it in a clean cloth or tea towel, squeezing to remove the excess water, then return to the bowl. Add the egg, cornflour (cornstarch) and some salt and pepper and mix it all together.

Preheat the air fryer to 200˚C (400˚F). Spray the air fryer rack or basket with oil and divide the mixture into 4 equal patties. Place in the air fryer and spray with oil again. Cook for 14–15 minutes until crisp and golden. Sprinkle the grated cheese on top, then air fry again for 2–3 minutes until the cheese has melted.

For the toppings: Dollop on your favourite toppings. I used sour cream, fresh chives and cooked crumbled bacon bits. Serve straight away and enjoy!
