Introduction
If your child is anything like mine, I’m guessing they’d happily live off pasta with tomato sauce and cheddar cheese day in, day out. This is a lovely veg-and- protein-packed update – you can blitz the sauce for younger children who’d find chickpeas challenging, or keep it whole for older toddlers and children. The vibe is definitely a creamy tomato sauce, but with a view to a more balanced meal. Adding Boursin cheese does wonders for the flavour – use your favourite vegan soft cheese as an alternative.
