Introduction

In no time at all, you can whip up a batch of these dreamy chocolate cookies made with our ceremonial grade pure grade matcha. You can substitute any matcha including our Ice Cream, Salted Caramel or Birthday Cake matcha. If you need some fuel to keep you up all night, these cookies are absolutely the answer – and yummy too!

Ingredients

125g unsalted butter, softened
275g caster sugar
1 large egg
2 tbsp pure grade matcha
1 tsp vanilla bean paste
300g plain flour
½ tsp baking powder
2 tbsp water
125g dark chocolate, chopped into chunks
½ tsp sea salt flakes

Method

Preheat the oven to 190C/170C fan and line two flat baking sheets with baking paper.

Whisk the butter and sugar in a large bowl until pale and fluffy. Whisk in the egg until combined.

Fold in the matcha, vanilla bean paste, flour and baking powder, and add the water until you have a soft dough. Fold in three-quarters of the chocolate.

Divide the dough into 50g balls, roll out and press down to 2cm thick. Press in the remaining chocolate chunks and the sea salt. Transfer the cookies onto the baking sheets, about 4cm apart.

Bake for 12 minutes until puffed up slightly and cracked on top. Leave on the trays to cool completely.
