20-minute Crisp-topped Broccoli and Cauliflower Mac and Cheese

Introduction

This rich, indulgent mascarpone and ricotta-based mac and cheese might be one of my proudest creations. I rarely want to stand stirring béchamel sauce on a weeknight, so I’ve experimented variously with crème fraîche (quite good, made it into an earlier book) and crème fraîche and egg (less good) before hitting the holy grail – mascarpone, ricotta and cheddar. Stirred into hot pasta and just-blanched cauliflower and broccoli with a generous amount of Dijon mustard, it’s a crowd-pleasing weeknight win.
