5 Minutes With…Nathan Anthony of Bored of Lunch

Nathan Anthony, aka Bored of Lunch, is a home cook turned internet sensation who has amassed well over a million devoted fans of his easy, delicious and healthy recipes. This year he has stormed the book charts with the publication of two best-selling cookbooks, The Healthy Slow Cooker Book and The Healthy Air Fryer Book, in the space of three months. Eager to get to know the man behind the books, The Happy Foodie caught up with Nathan to chat about his latest cookbook, dream dinner party guest and last meal on earth.

Can you explain The Healthy Air Fryer Book to someone who knows nothing about it?

Bored of Lunch: The Healthy Air Fryer Book is first and foremost for the home cook. As a home cook myself, I practised and perfected my air fryer recipes over lockdown so this cookbook is filled with balanced, time-saving and healthy recipes, from delicious fakeaways to weekday day dinners, and speedy lunches to warming comfort food; it will have your air fryer crying for a day off. I just know you’ll love it and will be thanking me later!

If you had to pick one, what is your favourite recipe from the book?

Probably the crispy chilli beef. It’s sweet, it’s sticky and it’s crispy. Gorgeous with noodles or rice, maybe even a small side bowl of air fryer cubed potatoes. 

Can you give us your number one secret to cooking with an air fryer?

Practice, practice, practice! Get to know your air fryer; I can now cook in mine without even looking at the recipes because I can guess almost to the minute how my air fryer works, probably because I use it so much. Other than that make sure you use a good low-calorie spray to help everything get nice and crispy.

Who would your dream dinner party guest be?

Without a shadow of a doubt, it would have to be Miriam Margolyes. I’m obsessed with her, she’s hilarious! Miriam, if you’re reading this, this is a direct appeal and invite to join me in Belfast. (I’m also open to flying over and cooking at a location that works best for you.) 

If your last meal on earth had to be cooked in an air fryer, what are you ordering? 

Not difficult, it has got to be the chocolate egg croissant balls from The Healthy Air Fryer Book. Oozy chocolate eggs rolled in pastry and served with a cup of tea. I want something sweet if it’s my last bite!
