Panko-crumbed Tofu with Tenderstem and Peanut-lime Dip
Introduction
We call these ‘tofish fingers’ at home, and while they’re a dish I initially made for Alba, they looked too nice not to try one, followed by three. Adults: try to eat them soon after they come out of the pan, as the tofu has a nice fluffy texture when hot – toddlers seem happy with them at room temperature. Tenderstem broccoli always goes down well, so it’s a nice green to serve alongside the moreish peanut and lime dip.
