Rose and Pistachio Cupcakes
Introduction
These taste as good as they look: a variation on the blackberry pistachio cake in The Quick Roasting Tin, these cupcakes are very lightly flavoured with rose water. Go gently, as it can be a strong flavouring – you want a very light hint of rose here.
Ingredients

softened unsalted butter | |
caster sugar | |
medium free-range eggs | |
gluten-free plain flour (or ordinary plain flour if not making gluten-free) | |
baking powder | |
milk | |
rose water | |
For the icing: | |
icing sugar | |
water | |
green food colouring | |
dried rose petals or gluten-free wafer roses, to decorate |
