Jamie Oliver’s Black Bean Houmous Salad Wrap
The perfect healthy lunch to make from home or pack into your lunchbox, this wholemeal wrap from Jamie Oliver is layered up with a black bean dip, avocado, tomatoes, radishes and feta.

Introduction
Making a kinda houmous from different nutritious beans is a great flavour and health hack.
Ingredients
| 1 x 400g tin of | black beans |
| 1 tbsp | tahini |
| 1 | lime |
| ½ a clove of | garlic |
| 160g | radishes |
| 1 small (160g) | ripe avocado |
| 1 (160g) | ripe beef tomato |
| 2 | large seeded wholewheat tortillas |
| 1 tsp | dukkah |
| 30g | feta cheese |
Method
Put the beans into a blender, reserving the juice. Add the tahini, finely grate and reserve the lime zest, then squeeze in the juice. Peel and add the garlic, then blitz until smooth, loosening to your desired consistency with splashes of bean juice, if needed. Season to perfection.
Lightly crush the radishes. Halve, destone, peel and slice the avocado. Gently toss with 1 tablespoon of red wine vinegar and ½ a tablespoon of extra virgin olive oil, and season to perfection. Slice the tomato.
Warm the tortillas, slather on the houmous, then pile on all the veg, sprinkle over the lime zest and dukkah, and crumble over the feta. Finish with a little drizzle of extra virgin olive oil, if you like, and get stuck in.
Easy swaps: Swap out the radishes for baby carrots, courgettes or beets, or a mixture!
