Nadiya Hussain’s Soba Chicken Noodles
Nadiya Hussain‘s quick, healthy soba noodle bowl has a rich and complex broth flavoured with citrus and spices and packed with poached chicken and filling noodles.
Introduction
Soba noodles are an all-round favourite in our home and perfect for a noodle soup dish like this. The broth is aromatic and healing. Best of all, unlike traditional broths, this is my fast version, without compromising on flavour.
Ingredients
| 1 ltr | cold water |
| 4 | chicken stock cubes |
| 1 | clementine, halved |
| 1 large stick of | cinnamon |
| 1 | star anise |
| 100ml | soy sauce |
| 500g | boneless chicken thighs, cut into strips |
| 250g | soba noodles |
| 2 tsp | ginger paste |
| 2 tsp | garlic paste |
| 2 tsp | chilli flakes |
| fresh coriander, finely chopped | |
| To serve: | |

Method
Pour the of cold water into a pan and add the chicken stock cubes, halved clementine, stick of cinnamon, star anise, soy sauce and the boneless chicken thigh strips.
Bring everything to the boil and leave to simmer for 15 minutes.
Drain into a colander suspended over a bowl so you can catch all that liquid. Pour the liquid back into the pan.
Take out all the chicken strips from the colander and get rid of the rest of the stuff.
Add the soba noodles, ginger paste, garlic paste and chilli flakes and bring back to the boil, then simmer until the noodles are cooked.
Sprinkle over the coriander and serve with lime wedges.
