Bored of Lunch’s Air Fryer Cookie Dough Breakfast Bars
The perfect breakfast to batch for the week ahead and pack for on-the-go eating, these chocolate chip-studded oat bars from Bored of Lunch are a much more satisfying option than shop-bought cereal bars.
Introduction
I love a cookie, but these batch-roll cookie dough bars are the perfect energy bar that will also kill a craving if you are on the go.
Ingredients
| 225g | jumbo oats |
| 75g | chocolate chips |
| 50g | runny honey |
| 1 | ripe banana, mashed |
| Pinch of | salt |
| 1 tsp | vanilla extract |
| 100ml | semi-skimmed milk |
| 2 | eggs |
Essential kit
You will need: an air fryer.
Method
Line a square baking tin (approximately 22cm) with greaseproof paper.
Mix all the ingredients together in a large bowl, then transfer to the tin, gently pressing down until the top is smooth.
Bake for 18–20 minutes at 180°C in the air fryer or 25 minutes in the oven at 180°C/160°C fan.
Once cooked, allow to cool in the tin, then slice into 16 bars.
