Introduction from Damian King Lee

Alpine fondue meets Asian attitude. Just like fondue, this hearty volcano of loveliness bubbles away while everyone gathers round, waiting to nab their favourite bits. Use whatever tender vegetables you like. In Vietnam they prefer water spinach, mustard greens or cabbage, as well as mushrooms like enoki or oyster. We’ve used prawns, but you can substitute with salmon, lean pork or beef.

Ingredients

For the marinated meat or fish:
1 tsp ready-made fish sauce
pinch of ground white pepper
½ tsp garlic paste, or use 1 garlic clove, crushed and chopped
150g (5½oz) raw king prawns (jumbo shrimp), or use salmon, beef or pork fillet
For the broth:
6–8cm (2½–3¼in) piece of fresh root ginger, peeled and finely sliced, or substitute 2 tbsp of ginger paste)
2 lemongrass stalks, ends removed, crushed and finely chopped
2 tbsp chilli paste, or use 2 whole fresh red chillies, finely chopped
300g (10½oz) brown crab meat
2 litres (3½ pints) boiling water
1 litre (1¾ pints) coconut water (100 per cent pure, no added sugar)
For the dipping sauce:
2 tbsp light soy sauce
½ tbsp ready-made fish sauce
½ tsp garlic paste, or 1 garlic glove, finely chopped
½ fresh or dried chilli, finely chopped
To serve:
100g (3½oz) salmon fillet, cut into thin strips
200g (7oz) fresh clams, cleaned
300g (10½oz) spinach leaves
300g (10½oz) mustard green leaves, or chard or spring greens/cabbage
160g (5¾oz) dried rice vermicelli noodles, soaked in boiling water for 2 minutes, then drained

Essential kit

You will need: a portable gas stove, fondue stove, or any kind of hotpot with a little burner.

Method

In a large bowl, mix together the fish sauce, garlic and white pepper. Add the meat or fish and mix it all up so it’s nicely infusing. Leave to marinate for 20 minutes.

To make the broth, place a large saucepan over a high heat and add the ginger, lemongrass and chilli paste. Then add the brown crab meat, along with the boiling water. Simmer the broth for 3 minutes with the lid on, then strain it through a sieve and put the stock into a hot pot.

In a small bowl, mix the ingredients for the dipping sauce and set aside.

Finish off the broth by adding the coconut water, then place it over a portable gas stove in the middle of the table. You can also use a fondue stove, or any kind of hotpot with a little burner.

Arrange all the ‘to serve’ items on separate plates on the table, along with the dipping sauce and smaller bowls of noodles for each diner. Basically, you get stuck in and make your own bowl as you like it.
