Summer Berry Jellies

Ingredients

Recipe 1 - The Gelatine
450ml Elderflower Cordial
4 sheets of gelatine
200g of mixed berries
mint leaves for garnish
Recipe 2 - The Vegan
450ml Elderflower cordial
1 tbsp Agar flakes
200g mixed berries
mint leaves to garnish

Method

Recipe 1:

Soak the gelatine leaves in a bowl with 100 ml cold water for 4-5 minutes until it swells and softens. Remove, squeezing out any liquid. Add to a pan with 3 tbsp of the elderflower cordial and stir until it melts, then combine with the rest of the cordial and pour into 6 glasses, placing a mix of berries in each and a small mint leaf or two, if you have them. Leave in the fridge overnight to set, or at least 3-4  hours.

Recipe 2:

Place the cordial in a small pan and sprinkle over the agar flakes, heating gently until they have dissolved. Pour into 6 small glasses (allow to cool a little if its too hot) placing a mix of berries in each and a mint leaf or two, if you have them. Leave in the fridge for 3-4  hours to set.
